Blackberry Granola Bars
Blackberry Crumble Granola Bars
DAIRY-FREE, GLUTEN-FREE (OPTIONAL), VEGAN (OPTIONAL), SUPERFOODS
Servings: roughly 5 cups
Prep Time: 15 minutes
Cook Time: 30 minutes
Granola Bar Base:
2 cups of rolled oats (for gluten-free, use gluten-free rolled oats)
1/2 cup of almond flour
1/2 cup of coconut sugar
1/2 cup of dairy-free butter (I prefer Miyoko’s Kitchen)
1 tbsp of olive oil
1/2 tsp of baking soda
Blackberry Chia Jam:
10 ounces of frozen raspberries
2 tbsp of chia seeds
1/2 of water
Pre-heat oven to 375°F.
In a large mixing bowl, combine ingredients for granola bar base.
In a medium-size sauce pan, combine raspberries and water.
Bring pot to a rolling boil, mash blackberry into a sauce, and add chia seeds.
Add granola mixture to a baking pan and add chia seed jam on top.
Bake for 25 minutes.
Allow to cool for ~1 hour.
