Blackberry Granola Bars


Blackberry Crumble Granola Bars


Servings: roughly 5 cups

Prep Time: 15 minutes

Cook Time: 30 minutes


Granola Bar Base:

2 cups of rolled oats (for gluten-free, use gluten-free rolled oats)

1/2 cup of almond flour

1/2 cup of coconut sugar

1 scoop of Vital Proteins Dark Chocolate Blackberry collagen

1/2 cup of dairy-free butter (I prefer Miyoko’s Kitchen)

1 tbsp of olive oil

1/2 tsp of baking soda

Blackberry Chia Jam:

10 ounces of frozen raspberries

2 tbsp of chia seeds

1/2 of water


  1. Pre-heat oven to 375°F.

  2. In a large mixing bowl, combine ingredients for granola bar base.

  3. In a medium-size sauce pan, combine raspberries and water.

  4. Bring pot to a rolling boil, mash blackberry into a sauce, and add chia seeds.

  5. Add granola mixture to a baking pan and add chia seed jam on top.

  6. Bake for 25 minutes.

  7. Allow to cool for ~1 hour.
