Tofu "Tuna" Salad

TOFU “TUNA” SALAD

VEGAN, GLUTEN-FREE, DAIRY-FREE


Servings: ~ 3 cups

Prep Time: 45 minutes (including 30 minutes of refrigeration)


Ingredients:

1 block (14 ounces) of tofu

1/4 cup of mayonnaise

1 tsp of caper juice

1 tbsp of dijon

2 stalks of diced celery

1/3 cup of purple onion

1tbsp of siracha

S+P


Instructions:

  1. Remove 1 block of tofu from container and drain. Use paper towels to squeeze out as much water as possible.

  2. Crumble tofu into a medium size mixing bowl.

  3. Add remaining ingredients to the bowl. Combine ingredients throughly.

  4. Place in fridge to chill and to allow tofu to absorb flavors.
