Dairy-Free Egg Salad Ques(NO)dilla

For Egg Salad
4 hard boiled eggs, mashed
1 tsp of capers
2 tsp of plain hummus (Hope Original Hummus)
1/2 tbsp of dijon musard
1/2 tsp of dill
1 tsp of rosemary
Pepper, to taste
2 avocados, mashed
4 tbsp of Sriracha
2 cups of greens
1 tbsp of oil
Mash hardboiled eggs in a small bowl until whites and yolks are well combined.
Add remaining egg salad ingredients and mix thoroughly.
Layer egg salad on tortilla along with, mashed avocado, 1 tbsp of Sriracha, and 1/2 cup of greens; top with another tortilla
Add to a well-oiled skillet and cook on each side for 2 - 3 minutes.
Serve with your favorite dipping sauce, I chose Zubiate’s Cocina Crema de Jalapeño.
