Dairy-Free Egg Salad Ques(NO)dilla

Gluten-Free, Vegetarian, Dairy-Free


Serving: 4 Quesadillas

Prep time: 15 minutes

Cook time: minutes


Ingredients:

For Egg Salad

4 hard boiled eggs, mashed

1 tsp of capers

2 tsp of plain hummus (Hope Original Hummus)

1/2 tbsp of dijon musard

1/2 tsp of dill

1 tsp of rosemary

Pepper, to taste

For Quesadillas

8 tortillas

2 avocados, mashed

4 tbsp of Sriracha

2 cups of greens

1 tbsp of oil

Instructions:

  1. Mash hardboiled eggs in a small bowl until whites and yolks are well combined.

  2. Add remaining egg salad ingredients and mix thoroughly.

  3. Layer egg salad on tortilla along with, mashed avocado, 1 tbsp of Sriracha, and 1/2 cup of greens; top with another tortilla

  4. Add to a well-oiled skillet and cook on each side for 2 - 3 minutes.

  5. Serve with your favorite dipping sauce, I chose Zubiate’s Cocina Crema de Jalapeño.
