Buffalo Cauliflower

Buffalo Cauliflower

Vegan, Gluten-Free, Dairy-Free


Servings: 3 - 4 servings of buffalo cauliflower

Prep Time: 20 minutes

Cook Time: 30 minutes


Ingredients:

1 head of cauliflower

1/2 cup of chickpea flour 

1/2 cup of gluten-free panko

3/4 cup of Hope Foods hummus (buffalo bleu)

2 tbsp of lemon juice 

1 cup + 1 tbsp of water

1 tsp of garlic powder

S+P to season 


Instructions:

  1. Preheat the oven to 400. 

  2. Chop 1 head of cauliflower into small florets.

  3. In a small bowl, combine: chickpea flour, panic, garlic powder, and S+P

  4. Add 1 cup of water and mix until it’s batter-like. 

  5. Dip cauliflowers one-by-one in batter and place on a greased baking sheet. 

  6. Place in oven and cook for 20 minutes.

  7. While cauliflower are cooking, prepare buffalo sauce by combining Hope Foods Hummus (available at Wholefoods or Harris Teeter) buffalo blue hummus withlemon juice, 1 tbsp of water, and S+P.

  8. When cauliflower finishes cooking, coat them in the buff sauce.

  9. Cook for an additional 10 minutes. Allow to cool.


Note:

Thawed frozen cauliflower also works well - thaw for 30 - 40 minutes before preparing 

You can use Buffalo Sauce, of your choice, as opposed to preparing the sauce with Hope Foods Hummus
