Vegan Elotes Salad

Elotes Salad

Vegan, Gluten-Free, Easy Recipes


Servings: 6-8 cups

Prep Time: 5 minutes

Cook Time: 15 minutes


Ingredients:

1 bag (16oz) frozen corn

1/2 cup of chopped onion

1 can of black beans

1 tbsp of garlic powder

1/2 tbsp of oregano 

1/2 tbsp of cayenne

1 lime

1/4 cup of Zubiates Cocina queso

2 tbsp Zubiate’s Cocina jalapeño crema

1 tbsp olive oil 


Instructions:

  1. Heat a skillet to medium heat and add corn, chopped onion, and black beans with 1 tbsp olive oil. Cook for ~8 minutes, stirring occasionally.

  2. Add garlic powder, oregano, and cayenne. Add juice from 1/2 lime. Stir in spices, cover, and cook for 2 more minutes.

  3. Prepare sauce on the side, by adding juice from other half of lime, queso, jalapeño cream, and olive oil to a small bowl. Stir until well-combined.

  4. Add sauce to the skillet, and combine.

  5. Remove from heat and serve immediately.
