Vegan Pad Thai

Vegan, Gluten-Free (Option), Quick Dinner

Pad Thai Noodles (for gluten-free try Lotus Foods)

1 tsp of garlic

1 tbsp of sesame oil

1 cup of broccoli

1 cup of sliced red pepper

1/2 cup of green beans

1 tbsp of lime juice

1 tbsp of sesame oil

1 tbsp of soy sauce

1/2 tbsp of Siracha

Toppings (optional)



Everything Bagel Seasoning

Sesame baked tofu

Green onion



  1. Prepare noodles according to instructions on package

  2. Heat a skillet or wok to low-medium heat and add garlic and sesame oil

  3. Add broccoli, red pepper, and green beans. Cook for ~10 minutes. 

  4. To prepare sauce, combine lime juice, sesame oil, soy sauce, and siracha in a small bowl.

  5. Drain noodles and rinse with cold water. Make sure they’re well-separated.

  6. Remove skillet/wok with veggies from heat, and add noodles.

  7. Mix together then add sauce, continue mixing until well-combined.

  8. Transfer to plate and add preferred toppings.
