Potato Salad

Vegan, Dairy-Free, Gluten-Free (optional)

Servings: 3-4 cups of potato salad

Prep Time: 10 minutes

Cook Time: 30 minutes


1 bag (16 ounces) of Melissa’s Produce Baby Dutch Yellow Potatoes, halved

1/4 cup of vegan mayo

1/4 cup of olive oil

1/2 tbsp garlic powder

1/2 cup of chopped fresh basil

1 tbsp of capers + juice

1/3 cup of almond mozzarella


  1. Bring a medium-sized pot to a boil, add in potatoes.

  2. Cook for 10-15 minutes, until soft and easily-pierced.

  3. Add potatoes to medium-sized bowl with remaining ingredients.

  4. Serve topped with pepper
