Creamy Shroomie Miso Sauce

VEGAN, DAIRY-FREE, GLUTEN-FREE (OPTIONAL)


Servings: 1/2 cup of sauce (enough for one bowl)

Prep Time: 35 minutes

Cook Time: 30 minutes


Ingredients:

8 ounces of sliced mushrooms

2 tbsp of olive oil

1 tbsp of coconut aminos

1/2 tsp of rosemary

1/4 tsp of garlic powder

2 tbsp of miso

1/4 cup of almond milk

1/4 cup of water

1/4 cup of nutritional yeast

1 tsp of dried basil

Salt and pepper, to taste


Instructions:

  1. In a bowl, combine 1 tbsp of olive oil, mushrooms, coconut aminos, rosemary, and garlic powder. Allow to marinate for 20-30 minutes.

  2. Pre-heat oven to 400°F.

  3. Bake mushrooms for 10-15 minutes.

  4. In a blender combine remaining ingredients..

  5. Transfer mixture to sauce pan, add mushrooms, and simmer on low-heat for 20 minutes.

  6. Serve with your favorite pasta or gnocchi. Top with pine nuts and extra nutritional yeast.
