Vegetarian Breakfast Pizza

Tzatziki Breakfast Pizza

Gluten-Free (Optional), Dairy-Free, Vegetarian


Servings: 1 pizza (8 slices)

Prep Time: 10 minutes

Cook Time: 10 minutes


Ingredients:

Preferred pizza crust (I used Caulipowered)

2 eggs, scrambled

1 tbsp of olive oil

1/4 cup of diced onion

1 cup of Beyond Meat beefy crumbles (or preferred meat or meat substitute)

1 cup of roasted brussel sprouts

1/2 cup of Violife cheddar shreds (or your choice cheese or cheese substitute)

Tzatziki sauce:

1/2 cup of dairy-free yogurt

1 tbsp of olive oil

2 tsp of lemon juice

1/2 tsp of dried rosemary

3/4 tsp of dried dill

Instructions:

  1. Prepare pizza crust according to package instructions. Remove from oven and leave oven on.

  2. While crust is baking, add olive oil, diced onion and beefy crumbles to a skillet. Cook on medium heat until onions are translucent.

  3. In a separate pan, scramble eggs.

  4. Add eggs to skillet with onions and crumbles. Heat skillet to low heat and add roasted Brussels and cheese.

  5. Prepare tzatziki sauce by combining all ingredients in a medium bowl and stirring until well-combined.

  6. Top pizza with tzatziki sauce and add ingredients from skillet evenly across crust.

  7. Bake for an additional 5 minutes. Top with avocado, salt and pepper, to taste, and lemon juice.
