Pumpkin Baked Oats

Pumpkin Pie Baked Oats

Gluten-Free, Vegan

Servings: 6 - 8 servings (2” slices of baked oats)

Prep time: 10 minutes

Cook time: 45 minutes


Ingredients:

Dry Ingredients:

1 1/2 cups of oats

1/2 cup of gluten-free all purpose flour

1/2 cup of flaked coconut

1 tsp of baking soda

pinch of salt

1 1/2 scoops of collagen powder (Further Food)

2 tbsp of pumpkin spice seasoning

Wet ingredients:

1 egg

2 tbsp of canned organic pumpkin

1 can of coconut milk

12 drops of monk fruit drops (or 1/2 cup of coconut sugar)

1 tbsp of oil


Instructions:

  1. Preheat oven to 400°F.

  2. Add dry ingredients to large mixing bowl and mix together.

  3. Add wet mixture to dry and mix until well combined.

  4. Line baking dish with oil and pour mixture in.

  5. Bake for 45 minutes. Check  if cooked all the way through, if not add 5-10 minutes until it is. Serve hot, reheated, or cold.
