PEANUT BUTTER & BEET PANCAKES
GLUTEN-FREE, DAIRY-FREE, SUPERFOODS
Servings: 6-8 medium sized pancakes
Prep time: 10 minutes
Cook time: 15 minutes
1 cup of gluten-free all purpose flour
2 tbsp of almond meal
1 tsp of baking powder
Pinch of salt
1/2 cup of almond milk
1 tbsp of oil
1 tsp of lemon juice
6 drops of liquid stevia
Mix ingredients until well combined.
Heat a pan to low-medium, and use butter to prevent sticking.
Pour batter into pan and flip when the cake starts to bubble.
Topped with your favorite toppings. I chose cocoa nibs, PB, and dairy-free yogurt.
