Hash Brown Waffles

Savory Hash Brown Waffles

GLUTEN-FREE, LOW-CARB, DAIRY-FREE, PALEO


Servings: 4 waffles

Prep Time: 10 minutes

Cook Time: 10 minutes


Ingredients:

1 cup of hash browns

1/4 cup of onion

1/2 cup of shredded zucchini 

2 eggs

3/4 cup of milk

1 tsp of lemon juice 

1 tbsp of olive oil 

1 tbsp of flaxseed meal

2 tbsp of chickpea flour 

S+P and basil to season 


Instructions:

  1. Heat a waffle iron to high.

  2. Combine all ingredients in a medium-sized mixing bowl.

  3. Grease waffle iron really well, close, and cook for 10 minutes.

  4. When edges are browned and the waffle is cooked through, remove from waffle iron.

  5. Serve with you fave savory toppings.


Notes:

I use frozen has browns, and have no issues with breaking them up/combining them with the other ingredients. You can also choose to use freshly shaved hash browns.
