Funfetti Baked Oats

Single-Serving Funfetti Baked Oats

Gluten-Free (optional), Meal Prep

Servings: 1 6” ramekin

Prep time: 10 minutes

Cook time: 25 minutes


Ingredients:

Dry Ingredients:

1/2 cups of gluten-free rolled oats

2 tbsp of almond flour

1/2 tbsp of coconut sugar

1/2 tsp of baking soda

1.5 tsp of Rainbow Sprinkles (I use Supernatural for dye-free sprinkles)

1/2 scoop of collagen powder (Further Food) (optional)

Pinch of salt

Wet ingredients:

1 egg

1/2 cup of almond milk

1/2 tsp of vanilla extract

Toppings (optional): Dairy-Free yogurt, Extra Sprinkles


Instructions:

  1. Preheat oven to 425°F.

  2. Add dry ingredients to small mixing bowl and mix together.

  3. Add wet mixture to dry and mix until well combined.

  4. Pour into oven-safe ramekin

  5. Bake for 20 minutes. Check  if cooked all the way through, if not add 5-10 minutes until it is.

  6. Top with your choice yogurt and extra sprinkles.
