Chocolate-Stuffed Banana Muffins

Gluten-Free (optional), Dairy-Free, Meal Prep, Superfoods

Servings: 12 muffins

Prep time: 15 minutes

Cook time: 12-15 minutes


Dry Ingredients:

1/3 cup of monk fruit powder

1.25 cups of all-purpose gluten-free flour

1/3 cup of flaxseed meal

1 + 1/2 scoops of chocolate collagen plus Reishi powder (Further Food) (optional)

1/2 tsp of baking soda

Pinch of salt

Wet ingredients:

2 eggs

1 can of coconut milk

1.5 tbsp of coconut oil

1 tbsp Soom Foods Chocolate Sweet Tahini

Ocho Chocolate Minis for extra chocolate-y goodness


  1. Preheat oven to 400°F.

  2. Add dry ingredients to large mixing bowl and mix together.

  3. Add wet mixture to dry and mix until well combined.

  4. Line muffin/cupcake sheet with oil and pour 2 tbsp of mixture in.

  5. Add Ocho Chocolate Minis to middle, and cover with extra muffin mixture.

  6. Bake for 12 minutes. Check  if cooked all the way through, if not add 3-5 more minutes as needed.
