Chocolate-Stuffed Banana Muffins
Servings: 12 muffins
Prep time: 15 minutes
Cook time: 12-15 minutes
1/3 cup of monk fruit powder
1.25 cups of all-purpose gluten-free flour
1/3 cup of flaxseed meal
1 + 1/2 scoops of chocolate collagen plus Reishi powder (Further Food) (optional)
1/2 tsp of baking soda
Pinch of salt
1 can of coconut milk
1.5 tbsp of coconut oil
Ocho Chocolate Minis for extra chocolate-y goodness
Preheat oven to 400°F.
Add dry ingredients to large mixing bowl and mix together.
Add wet mixture to dry and mix until well combined.
Line muffin/cupcake sheet with oil and pour 2 tbsp of mixture in.
Add Ocho Chocolate Minis to middle, and cover with extra muffin mixture.
Bake for 12 minutes. Check if cooked all the way through, if not add 3-5 more minutes as needed.
