S'mores Baked Oats

Campfire S'mores Baked Oats

Gluten-Free, Dairy-Free, can be made Vegan


Servings: 1 ramekin

Prep time: 5 minutes

Cook time: 20 minutes


Ingredients:

1/2 cup of gluten-free rolled oats

1 cup of almond milk 

1 egg

1 tbsp of chia seeds 

1 tbsp of hemp seeds

2 tbsp of gluten-free flour

1 scoop of collagen (Further Food)

1/4 cup of chocolate chunks + additional 10-20 chocolate chunks (dairy-free, optional)

1 tsp of maca powder 


Instructions:

  1. Pre-heat oven to 425°F.

  2. In an oven-safe ramiken, combine all ingredients. Stir together until all ingredients are well-combined.

  3. Bake for 15-20 minutes, until surface of oats is solid and golden, and chocolate is melted.

  4. Top with vegan marshmallow, extra chocolate chips (~15-20) and hemp seeds

  5. Turn oven to broil. Return ramekin to oven for an additional 2-3 minutes, until chips begin to melt and marshmallows are gooey.

  6. Allow to cool for 10 minutes before eating.


Notes:

Dairy-free chocolate chips and vegan marshmallows can be used to make this recipe dairy-free. A flax egg can be substituted to make this recipe vegan.
