CREAMY VEGETABLE SOUP

DAIRY-FREE, VEGAN, GLUTEN-FREE (OPTIONAL)


Serving: 6-8 bowls

Prep Time: 15 minutes

Cook Time: 40 minutes


Ingredients:

6 cups of water

3 bouillon cubes

2 tbsp of coconut aminos

1 can of coconut milk 

1/3 cup of nutritional yeast

1 cup of chopped mushrooms

1 cup of chopped asparagus

1 & 1/2 cup of spinach

1 & 1/2 tbsp of dried rosemary 

1 & 1/2 tbsp of minced garlic 

Pepper to taste


Instructions:

  1. Add all ingredients to a large pot.

  2. Lower temperature to low-medium, and cover with a lid. Cook for 30 minutes.

  3. Add pasta to the soup, recover with lid, and cook for 10 more minutes.
